Our special recipe of Thai Red Chicken Soup

Our restaurant offers various kinds of dishes. Some are really spicy and hot or some are sweet and sour. But Thai red Chicken is full of nutritions which really good for health. Let's take a look on its recipe.

Ingredients

Whole free-range chicken, 1 butternut squash, 1 bunch of fresh coriander, 100 g Thai red curry paste, 1 tin of light coconut milk.

  • Calories- 354g or 18% , Fat- 16.1g or 23%, Saturates- 5.8g or 29%, Sugars- 11.8g or 13%, Salt- 0.9g or 15%, Protein- 32.8g or 66%, Carbs- 20.5g or 8%, Fibre- 4.8g


Method Firstly, put the chicken in a large, deep pan. Then carefully, halve the squash lengthways and take out the seeds. Slice the coriander stalks, add to the pan with the squash, curry paste and coconut milk, then pour in 1 litre of water. Cover it properly and put it on a medium heat for 1 hour 20 minutes. Use tongs to remove the chicken to a platter. we can scoop any type of fat from the surface of the soup over the chicken, then sprinkle with half the coriander leaves.

We can also use a potato masher to crush some of the squash, giving our soup a thicker texture. Taste, season to perfection with sea salt and black pepper, then our Thai Red Chicken soup is ready for serving. Video Link:
